This Garden Vegetable Salad with a Honey Lime Dressing is perfect for summer. Made with a tangy dressing, tomatoes, cucumber, red onion and even Feta cheese, it’s a real winner!
If you’re looking for a fresh and light salad, this one’s for you! Using seasonal summer vegetables all wrapped up in a delicious sweet and tangy dressing. This salad dressing is so amazing that I also used it in the amazing Steak Salad Wraps! Goes great with Garlic Knots or Garlic Fingers on the side.
About the Garden Vegetable Salad
- Difficulty level – This is as super easy salad to make, anyone can make it! It takes very little time to put together and the dressing can be prepped in advance.
- Taste – This salad is light and fresh using a small amount of Feta Cheese to give it a little more substance. It wrapped up in a sweet and tangy Honey Lime Dressing.
- Serving – It makes four servings as a side salad. If you want to enjoy it as a main course, i’d say this will make two servings for a light dinner.
Ingredients
- Tomatoes – I used fresh ripe vine tomatoes.
- Cucumber – A fresh large cucumber.
- Onion – This recipe uses a red onion.
- Cheese – I used crumbled Feta Cheese.
- Fresh Herbs – I used fresh parsley.
- For the dressing – Lime juice, lime zest, honey, olive oil. ground ginger and salt.

How To Make the Salad
- Combine all the ingredients for the dressing in a small bowl. Whisk to combine and side aside.
- In a large salad bowl, add the tomatoes, cucumber, onion, feta and fresh parsley. Stir to combine all ingredients.
- Pour over dressing and stir to combine.
- For the best flavour, refrigerate for about an hour before serving.
Recipe Notes
- Use fresh ingredients – This is a very basic and simple salad and the flavour comes from freshness. So, use the freshest ingredients you can get your hands on!
- Don’t skip the dressing – This honey lime dressing is amazing and gives so much flavour to the salad.
- Dress before serving – To get optimal flavour in the salad, I recommend dressing this salad and storing it in the fridge for about one hour before serving.

Ingredients
For the salad:
- 2 Tomatoes diced
- 1 large cucumber cut in half length ways and diced
- 1 small red onion halved and thinly sliced
- 1 Cup Feta cheese crumbled
- Small bunch fresh parsley finely chopped
For the dressing:
- Juice from 2 limes
- Grated lime zest from 1 lime
- 2 tablespoon of honey
- 4 tablespoons Olive Oil
- Salt and pepper to taste
- 1 ยฝ teaspoon fresh ground ginger
