What is This Potato Recipe Like

  • Difficultyย โ€“ The recipe is pretty basic and easy. Just make sure to follow all the steps and donโ€™t miss anything out!
  • Tasteย โ€“ These potatoes have a delicious garlic butter flavour. The exterior of the potatoes are super crisp, while the inside of the potatoes are super fluffy and light.
  • Servingย โ€“ This recipe easy serves six servings. Remember, in the recipe card at the bottom of the post you can easily adjust servings to suit.

Garlic Butter Roasted Potatoes

Ingredients

  • Baby potatoes – This recipe uses baby potatoes. Because mine weren’t all the same size, I cut the bigger ones to make sure they all cooked evenly.
  • Butter – I used unsalted butter in this recipe. It doesn’t matter if it’s cold or at room temperature since it will be melted.
  • Garlic – Fresh garlic is the only way for this recipe. I used three garlic cloves. You can use more or less to suit your taste.
  • Parsley – I added a few tablespoons of fresh chopped parsley to the garlic butter.
  • Salt – Regular table salt works just fine for the garlic butter.

Instructions

  1. Preheat oven – Preheat oven to 375 degrees F/190 degrees C. Have ready a large baking tray and set aside.
  2. Parboil potatoes – Place the potatoes in a large pot of boiling water and simmer for about 15 minutes or until they are starting to go soft. Remove from pot and drain. Set aside.
  3. Make garlic butter – In a small saucepan, add the butter and bring it to a sizzle, about one minute. Add the garlic and give a good stir. Cook over medium heat for about 2 minutes. Add the parsley and the salt and stir to combine. Remove from heat.
  4. Roast potatoes – Place the parboiled potatoes on the baking tray. Evenly pour over the garlic butter. Place the potatoes in the oven and roast for about 40 – 45 minutes in total. Turn the potatoes half way through roasting.
  5. Serve – Remove from oven and serve hot.

Recipe Tips

  • Cut the potatoes into the same sizeย โ€“ Itโ€™s important to cut the potatoes as close to the same size as you can. This will ensure even roasting.
  • Parboil the potatoes until they are just starting to go go softย โ€“ You should be able to slightly pierce them with a fork. You donโ€™t want them soft all the way, just starting to cook.

Substitutions

  • Potatoesย โ€“ As explained previously, I used baby potatoes. You can choose to use any kind of potato that you like for this recipe
  • Garnishย โ€“ You do not need to garnish these potatoes, itโ€™s completely optional. I used fresh chopped parsley. However, fresh chives would be nice as well.

Can you reheat roasted potatoes?

Roasted potatoes are best served as soon as they are cooked. However, you can reheat them on a large baking tray at 350 degrees f/180 degrees c for about 10 minutes.

Why are my roast potatoes not crispy?

There are many reasons your potatoes may not be crispy. If you used a potato with a higher starch content, like new potatoes they may not crisp up. Also, the oven may not be hot enough or they were not cooked long enough.

Do I have to parboil the potatoes to get them crispy?

Yes, this step is essential to getting perfect roast potatoes. It softens the exterior of the potato enabling the oil to completely coat the outside and get into a few small cracks of the potato. This ensures crispy potatoes every time.
