These are just so delicious!  I can’t express how delicious they are through words, so you are going to have to make them for yourself.  I made these for the first time at a party two summers ago and I loved them then and I still love them now.

The idea for this cocktail came from The Pioneer Woman.  I didn’t follow that recipe exactly, so I kind of came up with my own version.  However, I did do the sugar lime rim exactly as she did in hers.  So delicious!

If you’re into summer cocktails, you got to try these Mango Margaritas. Light, fresh and a definite kick. Serve some Veggie Nachos on the side for summer snacking and to help absorb that tequila….hahaha.

When I served these to friends recently, they were welcomed with opened arms. We nibbled on some Spiced Spicy Fried Shrimp with a Minted Yogurt Dip and the Chicken and Avocado Salad Cups. Yum!

Here’s a Few More Fresh Summer Drinks

Enjoy the cocktails friends and I’ll see you all tomorrow with something new to share!

  • Lots and lots of crushed ice
  • 4 Tablespoons sugar
  • Zest of one lime

Instructions

  • First, cut your mango into large chunks. Or maybe it will be so soft you that you just scoop out the flesh. Once you have done this, add the mango, tequila, Cointreau, 7up and crushed ice to your blender. Mix on high speed until it is well blended. Add more ice if necessary.
  • Grate a lime for the zest and mix this with the sugar and add a squeeze of lime juice and mix it up well. With another lime section, rub it around the rim of your cocktail glass. Tip the glass upside down into the sugar lime mixture until the rim is completely coated in the coating. Invert the glass upright and pour in your margarita! Garnish with a lime slice and enjoy!
