Mediterranean Thin Crust Pizza

Looking for all my thin crust pizza fans today. I’ve been making pizza for years and years with varying degrees of success. Somewhere about five years ago I completely cracked it. You can find everything you need to know about Pizza Dough if you’re interested. For this recipe I used my homemade pizza dough that was already premade, which made this recipe super easy and quick. Any dough will work! Thin crust pizza is crispy, light and just downright delicious!

Instructions

  1. Preheat oven – Preheat oven to 475 degrees f/246 degrees c and place the oven rack at the lowest setting. Place a pizza stone, cast iron or steel baking tray on the oven rack.
  2. Stretch the pizza dough – Place the dough ball on a lightly floured surface and press it down with your hand. Start stretching the dough about an 12 inch circle.
  3. Transfer pizza dough to parchment paper – Place the pizza dough on top of a sheet of parchment paper. Then place it on top of a pizza board (this will make it easy to slide it into the oven)
  4. Top pizza – Top the pizza with the sauce, oregano, parmesan cheese, mozzarella cheese, roasted peppers, black olives and fresh spinach. Brush the edges of the pizza with the olive oil.
  5. Bake pizza – Slide the pizza into the oven on the preheated oven. Bake between 6 – 8 minutes.
  6. Serve – Remove from oven and let sit for a couple of minutes before cutting and serving.

Recipe Tips

  • Pizza dough – for this recipe I used my own homemade premade Pizza Dough. The recipe time stated below does not include the time it takes to make pizza dough. For this recipe you can use you own dough, purchased pizza dough or a purchased thin crust pizza crust.
  • Pizza sauce – again, I used Homemade Marinara Sauce. But any store bought pizza sauce or marinara sauce works great. Use your favourite!
  • Pizza assembly – I always like to assemble my pizza on a sheet of parchment paper placed on top of a pizza board. This makes it very easy to slide the pizza into the oven. The pizza will go in the oven on top of the parchment paper.
  • Cooking the pizza – It’s very important to have a preheated surface in the oven to place your pizza on top of. I can’t stress this enough. It’s best to use a heavy surface like a pizza stone, cast iron or baking steel. If you don’t have any of those things, use a baking sheet of any kind.
  • Cooking time – this pizza cooked in exactly 6 minutes in a preheated 475 degrees f oven. It was cooked with the rack at the lowest setting and on a preheated cast iron surface. Cooking time will vary depending on what surface you are cooking your pizza on and how hot your oven is.

Substitutions

  • Black olives – I used black Kalamata olives for this recipe because they give a great flavour. You can use any kind of olives that you like. Green olives of any kind would work really well also.
  • Jar roasted red peppers – I love these peppers that you can buy in a jar. You will probably find them in your supermarket with the canned tomatoes or if you have a specialty isle, it might be with the Italian food. If you can’t find them, you can roast your own peppers or even use sun dried tomatoes.
  • Fresh spinach – I used only a small amount of fresh spinach for this recipe. Feel free to use more or omit it all together if you don’t prefer it. You could use arugula if you like. If you choose to use arugula, don’t dress your pizza with fresh arugula until after the pizza is cooked.
  • Marinara sauce – I love red sauces on pizza, but you could completely use a white sauce like seen in my Spinach and Alfredo Whole Wheat PIzza.
  • Cheese – I used a mix of mozzarella and parmesan for this recipe and the flavour was great. You could easily add a little feta cheese for a complete Mediterranean flavour.
  • Oregano – This recipe uses dried oregano but you can easily use fresh herbs like basil or even mint for a fresh flavour.

Frequently Asked Questions

What’s the difference between thick crust and thin crust pizza?

Thick crust pizza has a thicker base, almost bread like. Whereas, thin crust pizza is much thinner and crispier.

Is thin crust pizza dough different to regular dough?

Although there are different recipes for different types of pizza, you can use any pizza dough to make thin crust pizza. You just stretch the pizza thinner before topping and cooking it.

Is thin crust pizza healthier?

Generally yes, because the slices are thinner and thin crust can’t hold as many toppings. But it would depend on how much cheese and toppings you have on your pizza.
