This Sun Dried Tomato Skillet Pasta is a great mid week dinner the whole family will love. A fully loaded pasta dish with sauteed zucchini and peppers and the addition of sun dried tomato pest for a fantastic flavour. Makes a great dish for lunches, dinners or even as a side dish to the Skillet Chicken in a Creamy Sun Dried Tomato Sauce.

If you follow along with my Blog, you know there’s going to be a lot of quick and easy dinners along the way. Feeding a family on busy days usually requires a dinner that I can have on the dinner in 30 minutes flat. And I know you guys are all on board with quick dinner’s too, right? It’s what mid week meals are all about for me. And here’s what sums up this dish in a nutshell.

Sun Dried Tomato Skillet Pasta

Ingredients

  • 8 oz penne pasta
  • 1/2 cup sun dried tomatoes
  • 1/2 Cup Parmesan cheese finely grated
  • 1 Red pepper cut into 1 inch pieces
  • 1 Zucchini halved length ways and cut into 1/2 inch slices
  • 2 cloves garlic crushed
  • 2 Tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Small bunch of fresh chopped parsley

Instructions

  • Cook the vegetables – In a large skillet, add the olive oil and garlic. Stir for a minute. Add the peppers and zucchini and stir well. Cook over medium heat for 15 – 18 minutes until soft and cooked well. Add the sun dried tomatoes and stir.
  • Cook the pasta – Cook and drain the pasta while the vegetables are cooking.
  • Combine the dish – Add the cooked pasta to the skillet and stir well. Add all the seasonings, the fresh parsley and the parmesan cheese. Stir well.
  • Serve – Serve immediately.

Recipe Tips

  • Cooking times – this dish comes together pretty quickly. It’s best to cook the pasta while the vegetables are cooking so they are both ready at the same time.
  • Adding the cheese – it’s important to add the cheese after you add the pasta. If you add it to the vegetables before you add the pasta it will clump together in the warm vegetables.
  • Type of sun dried tomatoes – the best type of sun dried tomatoes to use in this recipe are the ones that are packed in oil. They give so much flavour.

Substitutions

  • Pasta – I used penne pasta but you could easily use spirals or short cut macaroni as well.
  • Red bell pepper – I chose to use a red bell pepper mostly for colour. Green or yellow peppers would work.
  • Fresh herbs – I chose to use fresh parsley for this recipe, but you don’t need to add if you don’t have any. Or alternatively, you could use dried parsley or even fresh basil.
  • Sun dried tomatoes – there are really what give this dish so much flavour. However you could substitute the sun dried tomatoes for sun dried tomato pesto. Just use about three tablespoons.
