For me, personally, I love it for it’s versatility and quick cooking time! But there are so many more benefits of cooking with salmon. I don’t give health advice as I’m not any kind of nutritionist. But, salmon is low in calories and high in healthy fats. So, it’s can’t be all bad, right?

- Salmon fillets
- Lemon juice
- Garlic cloves
- Capers
- Olive oil
- Zest of one lemon
- Salt and pepper
- Parsley
Get Cooking on the Zesty Pan Seared Salmon
- I always pat dry the fish before cooking.
- Chop, mince and dice everything before getting started. Remember, organization is key in cooking!
- Here, I zested the lemon, chopped the parsley and crushed the garlic.

Make The Sauce and cook The Salmon
The sauce for this dish is cooked in a separate dish and then poured over the cooked salmon at the last minute of cooking.
- Heat a large skillet on the stove top and add a little olive oil. Add the salmon, skin side down and cook for about 3 – 4 minutes per side until the salmon is cooked through.
- In a small saucepan make the sauce. Add butter to the pan until it sizzles, about a minute. Next up, add the garlic and capers and cook for 1 to 2 minutes. Add fresh parsley, stir well and remove from heat.
- Pour the sauce over the cooked salmon

Zesty Pan Seared Salmon
Ingredients
For the sauce
- Juice of two lemons
- 3-4 Garlic cloves crushed
- 1 tbsp butter
- Zest of one lemon
- Small bunch of fresh chopped parsley
- 2 Tablespoons capers
for the salmon
- 4 Salmon fillets
- 2 Tablespoons olive oil
- Salt and pepper
Instructions
Make the sauce
- In a small sauce pan add the butter until it sizzles, about a minute. Add the garlic, capers, lemon zest and lemon juice Stir and let cook for about a minute. Add fresh chopped parsley, stir and remove from heat.
Cook the salmon
- Season the salmon with salt and pepper.
- Heat a large skillet over high heat. Add the olive oil. Place the salmon in the skillet skin side down.
- Cook each side for 3 – 4 minutes depending on the thickness of your salmon.
- Pour over sauce at the last minute. Remove from heat and serve immediately.
