Avocado and Corn Salad with Honey Lime Dressing

This Avocado & Corn Salad would make a great addition on your summer dinner table all summer long. Using all fresh ingredients like avocado, corn cherry tomatoes and spring onions, it just says summer.

There is an expression about salads, “It’s all about the dressing.” Well, I kinda’ got to agree with this. Without a salad dressing what do you have really? A bunch of ingredients swilling around a bowl with no connection to each other.

Anyway, you add the dressing and a little kind of magic happens. That’s how it went for this super simple yet delicious salad. It was all down to the Honey Lime Vinaigrette. Supposed to be lime, but I didn’t have those. The lemon filled in perfectly and the dressing salad combo was the tastiest I’ve had in a while. Time to get your salad on!

What is This Salad Like

  • Difficulty – This is such and easy salad to make with very few ingredients. Just be careful not to over toss the salad and squash the avocados.
  • Taste – A delicious fresh salad that is perfect for summer. The honey lime dressing gives with a bit of a sweet taste which goes great with the fresh vegetables.
  • Serving – As a side this, it will serve four people. If serving as a lunch, It will make two servings.

For the salad:

  • Corn – I used can corn for this easy salad.
  • Tomatoes – Cherry tomatoes work great.
  • Avocados – Ripe avocados
  • Spring Onion – Spring onions add a great flavour to the salad mix.

For the dressing:

  • Lime Juice – Lime juice adds a zest to the dressing
  • Olive oil – I used extra virgin olive oil as a base for the salad dressing.
  • Vinegar – White wine vinegar.
  • Sugar – A small amount of sugar takes away the bitterness of the dressing.
  • Honey – Adds a nice sweetness to the dressing.
  • Salt – Just a little salt enhances the flavours of the salad.
  • Black pepper – Works great in salad dressings.
  • Coriander – A small amount of fresh coriander adds a great flavour as well as freshness.

  • Prepare the salad – Combine all salad ingredients in a large bowl and stir gently to combine.
  • Make salad dressing – Combine all the dressing ingredients in a bowl and whisk.
  • Assemble salad – Pour dressing over salad and stir to coat all the vegetables. Toss lightly and serve.

Notes About The Salad

  • The Dressing Yes, you can make the dressing in advance. Because this is a vinaigrette dressing, it will keep in the fridge up to a week in an airtight jar.
  • The Salad The Salad is best served fresh. This Salad has fresh Avocado which will brown once exposed to air. You an prep the entire salad in advance and add the avocado just before serving.

Serve this up with the Roasted Bell Pepper Quesadillas for a complete meal. You could even make a big Tex Mex dinner and have the Slow Cooker Chicken Taquitos, the Mexican Rice and even Mexican Buñuelos for a delicious dessert!

For the salad:

  • 1 cup corn
  • 1 Pint cherry tomatoes quartered
  • 2 Avocados diced
  • 1 Spring onion finely chopped

For the dressing:

  • Juice of one lime
  • 2 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • 1 tablespoon sugar
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Small bunch of fresh coriander finely chopped
