It’s January and I have an abundance of fresh lemons. You see, I’m fortunate enough to live in a place where the sun shines year round and the lemon tree in the garden just keeps on giving. Earlier today I must have picked two dozen, I am not even kidding. Lemons anyone? And what better way to use up lemons than in a quick and easy pasta dish. Dishes like my Lemon Cream Spaghetti & Shrimp, Fresh Spinach & Zesty Lemon Spaghetti and my Zucchini Pasta Salad in a Lemon Vinaigrette are all great ways to use up lemons.

What’s great about this dish we have here today, is that it’s quick, it’s easy and it’s delicious. Great for lunch or dinner and you can even dress it up a bit more if you feel like it. Le’s see how to make it!

Here’s What You’ll Need To Make This Pasta Dish

  • 6 oz pasta
  • 3 Tablespoons butter
  • 1/2 Onion diced
  • 2 Garlic cloves crushed
  • 1/4 Cup parmesan grated
  • 1/2 Cup cooking cream
  • 1/4 Cup vegetable stock
  • Juice of one lemon
  • Zest of one lemon
  • 1/2 Teaspoon dried basil
  • Small bunch fresh chopped parsley
  • Salt and pepper

Let’s Make This Quick and Easy Pasta Dish

  • Cook the pasta – Add the pasta to a boiling pot of water and cook for about 8 minutes or until it has reached the doneness you like. Drain and set aside.
  • Sautee the onions – In a medium skillet set over medium heat, add the butter and garlic. Let it sizzle for a minute and add the onions. Give a good stir and let the onions cook for about 5 minutes.
  • Make the creamy sauce – Add the stock, cream, lemon juice and lemon zest to the pan. Stir well and bring to a gentle simmer.

  • Add pasta and remaining ingredients – Add the pasta, cheese, basil, parsley, salt and pepper to the sauce. Give a really good stir and it’s ready to serve
  • Garnish – Completely optional, but you can give it a garnish with a little extra parsley and lemon zest if you like.

This is a great pasta dish that comes together pretty quickly. Yes, there are quite a few ingredients but the prep time is under 10 minutes and the cooking time 20. So, that makes is a Quick Dinner!

This isn’t an overly creamy pasta dish, it brings the flavour to the table with it’s punch of zesty lemon and bit of creaminess from the cheese and cream But it’s not overly creamy. Are There Any Substitutions I can Make To This Dish

  • Spiral Pasta – You can easily substitute macaroni or penne pasta.
  • Cooking cream – Milk will also work in this recipe if it’s what you have on hand.
  • Vegetable stock – I used vegetable stock, but you and reserve pasta water and use that no problem at all.
  • Herbs – I used dried basil and fresh parsley. You could use fresh basil if you have it. And if you like the flavour of dried oregano, you can add that.

Ingredients

  • 8 oz pasta
  • 4 Tablespoons butter
  • 1/2 Onion diced
  • 3 Garlic cloves crushed
  • 3/4 Cup parmesan grated
  • 3/4 Cup cream
  • 1/2 Cup vegetable stock
  • Juice of one lemon
  • Zest of one lemon
  • 1/2 Teaspoon dried basil
  • Small bunch fresh chopped parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh cracked black pepper

Instructions

  • In a large pot, cook pasta according to package. Drain and set aside.
  • In a large skillet set over medium high heat, add the butter and garlic. Let the butter melt and come to a sizzle. Add onions and sautee down for about 5 – 8 minutes.
  • Stir in cream, stock, lemon juice and lemon zest. Bring to a simmer and let thicken for a few minutes.
  • Add in pasta, cheese, parsley and basil. Season with a little salt and pepper and serve straight away.
