NOTE – The full recipe and instructions can be found at the end of the post in the recipe card.
Instructions
- Cook onions – In a medium saucepan set over medium heat, add the butter and allow it to sizzle. About 30 seconds. Add the onion and cook down until soft and slightly browned. About 5 – 8 minutes.
- Add spices – Add the turmeric, cumin and coriander to the onions. Give a good stir and allow the flavours to enhance for about 1 – 2 minutes.
- Add and cook peas – Pour in the defrosted peas and give a really good stir. Pour over the vegetable stock, stir and reduce heat to medium low. Leave to simmer for about 12 – 15 minutes. Stir occasionally as they simmer and add the salt.
- Serve – Remove from heat and garnish with fresh spring onion and fresh cilantro. Serve immediately.
Recipe Tips
- Chop onions small – Make sure to dice your onions really small for this recipe. Although you want the onion flavour, you don’t want to have large pieces of onions in this dish. It makes for a better bite if they are diced small.
- Fry spices – Make sure to add the spices to the onions as stated in the recipe. Frying spices give dishes so much flavour. If you add it to the peas directly, the flavour will end up diluted.
- Can serve them hours after cooking – These peas can be cooked and served fresh . However, the flavours do enhance after an hour or so. So, you can make them in advance and reheat for serving later.
