Ingredients
- Chicken – I used chicken breast cut into cubes for this recipe
- Fresh – lime juice, coriander, ginger root and garlic
- Seasonings – olive oil, honey, dried coriander, chili flakes or dried chilies

Instructions to make the Ginger & Lime Chicken Kebabs
- In a medium bowl combine the lime juice, olive oil, honey, dried coriander, fresh coriander, ginger, garlic, chilli, salt and pepper. Stir well.
- Add the chicken to the marinade and stir to completely coat the chicken. Cover and refrigerate for about an hour.
- Remove from fridge about 30 minutes before cooking. Place the chicken pieces on skewer sticks. As many as you like per skewer.
- Preheat your barbecue to a medium heat. Cook each side for about 5-7 minutes or until completely cooked. Baste with extra marinade while cooking. Can be served straight away or even at room temperature.
Recipe Notes
- Marinade time – Keep in mind that citrus breaks down chicken, so you don’t want to marinade it any longer than about an hour.
- Soak the wooden skewers – Soak them in water before using and it will help them from catching fire when you cook on the barbecue. It’s not 100% fool proof, but it’s much better than dry sticks. Here you will see the metal skewers, which I use when there are just a few of us. For crowds, I always use the wooden ones.
I served this chicken with Cucumber Raita and Nann bread. Great combination.

- 3 Tablespoons olive oil
- 1 Tablespoon honey
- 1 Teaspoon coriander
- Small bunch fresh coriander chopped
- 1 inch piece fresh ginger root finely grated
- 2 Garlic cloves crushed
- 1 Dried chili finely chopped.
