Halloween Mummy Rice Krispie Treats

These Halloween Mummy Rice Krispie Treats are a fun cookie to make with the kids. A rice krispie cookie topped with melted white chocolate and a few candy decorations for a spooktacular treat!

We’re almost mid way through October, which means it’s time to think about Halloween. Do you celebrate Halloween? To be fair, we don’t really celebrate anymore. Our kids have grown up to a stage where they aren’t interested in cute little parties anymore. But the kid in me, still enjoys Halloween and all the cute treats I can make.

I don’t have a lot of Halloween related content on the blog, but there are a few recipes of interest like the Witches Broomsticks. the Halloween Guacamole, Mummy Sausage Rolls and a fun Halloween Macaroni & Cheese. Oh, I almost forgot the Double Chocolate Cupcakes. Those are worth making! So, over the next few weeks I plan to share some more Halloween inspired recipes. Stay tuned friends!

Halloween Mummy Rice Krispie Treats

Ingredients

  • Cereal – For this recipe I used Rice Krispie cereal.
  • Marshmallows – I used regular sized marshmallows for these cookies. Marshmallows are what give these cookies their very chewy texture.
  • Butter – I like to use real non salted butter in pretty much all of my baking treats.
  • Vanilla extract – Vanilla gives a boost of flavour to all baked goods.
  • Salt – Just a pinch of salt is used in this recipe to bring out the flavours.
  • Chocolate – I used white baking chocolate. This type of chocolate melts easily and is great for decorating cookies and cakes.
  • Candy – For decorating the eyes I just used coloured m & ms as well as cut black licorice.

Instructions

  1. Prepare baking sheet pan – Grease and line with parchment paper a 9 x 13 inch baking sheet or pan. If using a baking sheet, make sure it’s a rimmed baking sheet. Set aside.
  2. Melt marshmallows – In a large pot set over medium heat, add the butter. Give a good stir and let it melt completely. This will take about 2 minutes. Add the marshmallows and stir immediately and allow the marshmallows to melt as you stir the mixture. This will take about 2 – 3 minutes. Depending on if you are using mini or large marshmallows. Instantly remove from heat once the marshmallows are melted.
  3. Add rice krispies – Add the vanilla extract and salt and stir. Add the cereal and stir with a wooden spoon until it’s completely incorporated.
  4. Spread into baking sheet pan – Pour the mixture onto the prepared baking dish. This will be really sticky and you will need to scrape it out of the pot. Using the back of a wooden spoon, evenly spread out the rice krispie mixture. Flatten it out and make sure it’s evenly spread out. Add sprinkles over the top.
  5. Allow to set – Leave to set for about an hour.
  6. Melt chocolate – Place the chocolate in a double boiler set over simmering water. Stir until it melts, about 2 – 3 minutes. Immediately remove from heat.
  7. Drizzle over chocolate – Place the hot melted chocolate into a zip lock bag. Cut a tiny corner off the ziplock bag. Drizzle the chocolate over the top of the rice krispie treats.
  8. Decorate – Top with candy for the eyes. Leave to set the chocolate for about 30 minutes. Serve straight away or place in an airtight container to serve later.

Recipe Tips

  • Melting marshmallows – It’s always best to do this over a lower to medium heat. And make sure to use a large pot. Stir as the marshmallows melt otherwise they will stick and burn in the pan. Immediately remove from the heat when it’s melted.
  • Adding the rice krispies – Make sure to do this immediately when the marshmallows have melted. Use a sturdy wooden spoon to stir.
  • Flattening in a cookie sheet – This is sticky and will stick to a spatula or spoon as you flatten it out. It’s best to dip the spoon or spatula into water and then flatten out the rice krispie mixture. Keep your spoon wet throughout the process.
  • Melting chocolate – Always melt chocolate in a double boiler. Or you can place a glass bowl over a simmering pot of water. Don’t have the heat too high or the chocolate may seize. Which mean it will melt and then harden. You want to melt it slowly and stir as it melts. Immediately remove from heat when it has melted.
  • Decorating – I find a ziplock bag works really well for piping on the chocolate. Just make sure to cut the tip really fine. You can use whatever kind of candy you like for the eyes.

substitutions

  • Marshmallows – I used regular white marshmallows for this recipe. You could use either jumbo or mini as well. If you prefer a different colour or flavour, you could use coloured marshmallows.
  • Cereal – I used branded Rice Krispies. Store brands of this type of cereal will work as well. Just make sure to use rice krispie type cereal.
  • Chocolate – This recipe uses white chocolate. I found it worked well for creating the mummies. You could use sugar icing glaze as well.
  • Candy – I used a mix of m and m type candy as well as black licorice for the eyes. By all meas use sugar candy eyes if you have them!

  • Kid’s Halloween parties – these mummy cookies would look great on a table at a Halloween themed party.
  • Add them to a cookie platter – serve them alongside other Halloween treats on a cookie plate.
  • Gifts for friends – these would make a great Halloween gift idea for kids’ friends.

Storage

  • Store in an airtight container – Use a container that fits them pretty snug. Layer parchment paper between the layers so they don’t stick together. Store them at room temperature on the counter. They will stay fresh up to three days.
  • Store in the fridge You can store them in the fridge, just make sure to take them out of the fridge about an hour before serving. They will harden in the fridge.

    I think I will make these to take to my friend’s for Halloween! We had a small flood in our house a couple months ago and I am still without an oven! So, I have been drooling over all the fall recipes I would love to be baking, but these I can make with my rangetop! 🎃
