Instructions
- Cook green beans – Place the green beans in a pot of boiling water and cook for about 5 – 7 minutes. Remove from water and pour over cold water. Place the green beans in a deep sided 8 inch casserole dish and set aside.
- Preheat oven – Preheat oven to 350ºF/180ºC.
- Saute onions – In a medium skillet set over medium heat, add 2 tablespoons of the butter and the diced onion. Cook until soft and lightly golden, about 5 – 8 minutes. Remove the onions from the skillet and set aside.
- Make sauce – In the same skillet add remaining butter and bring to a sizzle. Add the flour and whisk until it’s well combined. Add the garlic powder, onion powder, salt and black pepper. Stir well gradually add the vegetable broth, whisk as you pour. After you have added all of the vegetable broth, slowly start pouring in the heavy cream. Whisk as you slowly pour the cream. Continue to pour and whisk until you have added all the cream and you have a thickened sauce. Stir in the fresh parsley and cooked onions.
- Bake casserole – Evenly pour the sauce over the green beans. Top with crispy onions and the parmesan cheese. Loosely cover with foil and bake for about 35 – 40 minutes. Remove the foil and return to the oven for an extra 10 minutes until golden and bubbly.
- Serve – Remove from oven and allow to sit for about 10 minutes before serving. This will allow the sauce to completely thicken up.

Recipe Tips
- Multi task –Cook the green beans and sautee the onions at the same time. This will not only save time, but both parts of the recipe will be ready at the same time.
- Making the sauce – Make sure to continue to whisk as you pour the heavy cream while making the sauce. The sauce can curdle if the cream is poured in too fast.
- Prep ahead – The green beans can be trimmed and washed up to a day before and kept in the fridge. You can also prepare the dish and keep it refrigerated up to 24 hours before baking.

Substitutions
- Fresh green beans – Although fresh green beans are best, you can use frozen green beans for this dish.
- White onions – These give a great flavour to the dish. Alternatively, you can use leeks, spring onions, brown onions or yellow onions.
- Vegetable broth – You can use chicken broth if you prefer a different flavour.
- Heavy cream – This makes a very rich and creamy sauce. Alternatively, you can use whole milk but the sauce will be a little less creamier.
