What are These Green Beans Like
- Difficulty โ A really easy dish that requires only six ingredients. Can be prepped ahead of time and cooked just before serving.
- Taste โ These beans have a fresh flavour with a flavour of black olives. They are crisp but if you prefer them softer, just steam them for a little longer.
- Serving โ This dish will serve around four people as a generous side dish. In the recipe card below you can easily adjust the serving size.

Ingredients
- Green Beans โ Green beans are young beans that can also be know as French beans, string beans, and snap beans. For this recipe, fresh green beans work best.
- Onion โ I just used regular white onion diced small.
- Garlic โ Fresh garlic cloves are a must for this recipe. I cut the garlic bulbs into very thin slices for big garlic flavour.
- Olive oil โ Extra virgin olive oil. But any olive oil will work.
- Black olives – Make sure to buy pitted black olives for this recipe. As they will be much easier to slice.
- Salt โ I used regular table salt to finish the dish.

Instructions
- Place the green beans in a colander and pour boiling water over the beans. Immediately place the green beans in a bowl of cold water. Drain the green beans and set aside.
- Heat olive oil in a large skillet set over medium heat. Add the garlic and give a quick stir until the garlic is fragrant, about one minute. Add the diced onions and stir well. Cook down until golden and soft, about 8 minutes.
- Add the green beans and give a really good stir. Cook the green beans down until they are tender but still a little crisp. Add the olives and stir well. Cook for about one to two minutes to incorporate the olives completely. Season with salt and remove from heat.
- Serve as a side dish to any main course.






Recipe Tips
- Blanche the green beans โ Don’t skip this step! It will help keep the green beans crisp and retain their bright green colour.
- Prep ahead โ The green beans can be trimmed and washed up to a day before and kept in the fridge.

Substitutions
- Fresh green beans โ Although fresh green beans are best, you can use frozen green beans for this dish.
- Onions โ I used white onions. Alternatively, you can use leeks, spring onions, brown onions or yellow onions.
- Black olives – You can easily use green olives. And you can skip them all together if you prefer a different flavour. See the Garlic Sauteed Green Beans.
- Additions โ Feel free to toss in some fresh herbs at the end. Both fresh cilantro and parsley would both work well. If you would like a different flavour, you could even try a little fresh basil.

You can make sauteed green beans in advance. I recommend placing the cooked beans in a oven proof dish and covering with foil. When ready to serve, place in a preheated 350 degree f/180 degree c oven for about 15 minutes until warmed through.
