Got 5 minutes?ย  Well, get this super easy and Tomato Feta & Mint Salad. A great salad that can be served as lunch or a dinner side dish. Full of fresh flavours and deliciousย 


This is probably one of my favourite salads to have alongside a barbecue.ย  Easy fresh ingredients that take no time to put together.ย  Perfect for entertaining when you want to spend less time in the kitchen and more time with your friends.

I have added arugula to this salad which I did not do in the original post.ย  I love arugula and is goes really well with the flavours in this simple salad.ย

As lovely as this salad is on it’s own, it would also be nice with the Cucumber Raita as a dressing or on the side.  This salad is a great addition to any barbecue, which was just how we had it today.  Yes, a barbecue on a Monday afternoon!

Ingredients

  • 4 tomatoes cut into wedges
  • 1/2 Cup feta cheese crumbled
  • A few handfuls of fresh arugula
  • Small handful mint leaves roughly torn
  • 2 tbsp olive
  • Sea salt

Instructions

  • Arrange the arugula leaves on a large plate. Toss over the tomatoes, feta & fresh mint. Drizzle with olive oil and a sprinkling of sea salt. Done!
