Hello friends and happy Monday! Hope everyone one is doing well and starting to settle into summer mode. It’s heating up here and I’m all about easy cooking for the moment. Salads like this one, my Roasted Red Pepper & Feta Salad and my Feta & Tomato Salad Cups are always welcomed in the heat. What are your go-to foods in the heat?

For me personally, anything salad is always welcomed but I feed a family so there’s still lot’s of comfort food going on the table. And tonight we’re having the Singapore Style Chicken Noodle Stir Fry. It’s comforting and fresh all at the same time.

How To Make The salad

There is no magic here friends, just put it in a bowl, toss it together and enjoy! Literally, it is a 5 minute salad because there is hardly any chopping at all.

Can I make This Salad in Advance

Yes, you can prepare this salad in advance. If doing so, don’t add the balsamic glaze until just before serving as it will soak into the leaves and make them soggy.

Do you Know What Balsamic Glaze is?

Balsamic Glaze is made from balsamic vinegar. It’s the process of cooking balsamic vinegar for a long time until it attains a syrupy consistency. A sweetener like honey, maple syrup or brown sugar is commonly used to sweeten the glaze. You and buy Balsamic Glaze in most grocery stores

What Would be great to serve with this Salad

So many options! We had this at the weekend and served it with the Crispy Cod Cakes with Parsley Sauce. So good! It would go great with so many chicken dishes like the Slow Cooker Lemon & Rosemary Chicken or the Stuffing Topped Turkey Tenderloin.

No only is it great as a side dish, I’ve enjoyed this many times as just a lunch with some fresh bread or on it’s own. Garlic Knots go great with any salad!

Ingredients

  • 6 cups Arugula leaves
  • 6 oz Goat cheese cut into small pieces
  • 1/2 cup Pecans roughly chopped
  • small bunch chives finely chopped
  • 2 tbsp balsamic glaze
  • 1 tsp sea salt

Instructions

  • Place the arugula leaves in a large salad bowl and mix in the fresh chives. Toss really well.
  • Add the goat cheese and pecans.
  • Drizzle with balsamic glaze and sprinkle over sea salt. Serve immediately.
