It just wouldn’t be summer without an Old Fashioned Creamy Potato Salad. This is a new take on an old family favourite. I know everyone has their own favourite potato salad for summer, but sometimes, it’s nice to check out something new!
Look no further for What to Bring to a Summer Potluck! The Old Fashioned Potato Salad is my take on an age old family favourite. Potato Salads are the epitome of summer eating and they go great with any kind of barbecue main dishes like the Traditional Style Barbecue Pork Tenderloin Barbeuce Pork, the Barbecue Beef Kebabs or the Spicy Barbecue Chicken Tenders.
What is This Potato Salad Like
- Difficulty – This is a super easy summer salad to make. It does have quite a few ingredients and a chill time of one hour. But, it’s a great make ahead salad that everyone can make.
- Taste – A traditional potato salad with a creamy dressing and a great crunch of texture from all the fresh chopped vegetables.
- Serving – This salad makes anywhere between 6 – 8 servings comfortably.
Ingredients
- Potatoes – I used a boiling potato for this salad. Waxy potatoes work best like new potatoes or Yukon Gold. Alternatively, you could even use leftover mashed potatoes.
- Mayonnaise – This is used as a base for the creamy dressing. Any brand of mayo will work for this recipe.
- Mustard – I used Dijon mustard and it adds a little bit of a punch to the dressing. I don’t recommend grainy Dijon mustard.
- Vinegar – I used white wine vinegar which adds a little tartness to the dressing.
- Lemon juice – Just a squeeze of lemon juice adds a little bit of zest to the dressing.
- Onion – White onion finely diced adds a nice flavour as well as texture to the potato salad. Make sure to dice them fine.
- Celery ribs – Celery adds a wonderful flavour to potato salads. Make sure you celery is fresh and crisp for the best flavour and texture.
- Red & green peppers – Bell peppers add a nice touch to potato salads as well as a little sweetness. Dice them small.
- Spring onions – Are also known as scallions and they have milder flavour than regular white or brown onions.
- Seasonings – I used a mix of garlic powder, onion powder, salt and black pepper. I also used a small amount of sweet paprika just to garnish the salad.

Instructions
- In a large sauce pan, bring water to a boil and add potatoes. Cook for about 20 minutes or until soft. Remove from heat and drain the water. Transfer the potatoes to a large bowl and mash them really well. Set aside.
- Make the salad dressing. Combine the mayonnaise, mustard, white wine vinegar, lemon juice, garlic powder, onion powder, salt and black pepper. Whisk well to combine.
- In a large bowl combine the mashed potatoes, the salad dressing, chopped peppers, celery, white onion, and spring onions. Stir really well to combine.
- Transfer the potato salad to a serving bowl and sprinkle over sweet paprika. Cover with plastic wrap and refrigerate for at least one hour.
- Serve cold with your favourite sides.

- Mash potatoes well – To achieve a creamy texture, make sure to mash the potatoes really well to get out all the lumps.
- Chop vegetables small – I feel this salad is much better with the vegetables diced really small. Be sure to dice them small for the best potato salad.
- Chill time is important – This salad is best chilled for at least one hour. The flavours enhance as well it is better cold. You can even make it up to one day before serving.

Substitutions
- Bell Peppers – You can use other peppers such as Italian green peppers, poblano or cubanelle peppers.
- Celery – You can substitute radishes, cucumber or even zucchini.
- White onion – You can use yellow, brown or even red onions.

Ingredients
- 2 lbs potatoes peeled and diced
- 1/2 cup mayonnaise
- 2 tablespoons mustard
- 1 tablespoon white wine vinegar
- squeeze of fresh lemon juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 onion finely chopped
- 2 celery ribs finely chopped
- 1/2 red pepper finely chopped
- 1/2 green pepper finely chopped
- 3 spring Onions finely chopped
- paprika for garnish
