Hello! I’m finally back today after a very long break. I hope you are still enjoying all the Recipes on the site and are finding some delicious dinners, desserts and more to make this summer! So, I though what better way to get back to recipes than with this super simple chicken recipe!

What is this chicken dish like

  • Difficultyย โ€“ I feel this is anย easyย chicken recipe that anyone can make. It only requires a total of eight ingredients and is on the table in under one hour.
  • Tasteย โ€“ This is a pretty basic but tasty chicken recipe. The chicken is juicy and a little bit crisp on the outside. Delicious!
  • Servingย โ€“ This dish will serve between 4 – 6 adults depending on how much everyone would like to eat. I used small chicken thighs, so each serving was between 2 – 3 chicken thighs. But if your chicken thighs are larger, you may only serve between 1 – 2 pieces per serving.

Easy Oven Baked Chicken Thighs

Ingredients

  • Chicken thighs – This recipe uses skinless bone in chicken thighs. I used about 2 lbs/1kg and the chicken thighs themselves were quite small.
  • Olive oil – I used olive oil to add to the seasoning mix to coat the chicken thighs before baking.
  • Spices and seasonings – I made a simple mix of garlic powder, onion powder, sweet paprika, oregano, salt and black pepper. This makes a basic seasoning which gives so much flavour to the chicken.

Instructions

  1. Preheat oven – Preheat oven to 400 degrees f/200 degrees c. Have ready a large baking tray and set aside.
  2. Pat dry the chicken – Place the chicken thighs on the baking tray and pat them dry with paper towels. Make sure they are completely dry so the seasoning sticks well.
  3. Make seasoning blend – In a small bowl combine the olive oil, garlic powder, dried oregano, salt, onion powder, sweet paprika and black pepper. Stir well to combine.
  4. Coat the chicken – Brush the chicken with the seasoning and make sure to completely coat the chicken.
  5. Bake the chicken – Bake the chicken for about 40 minutes or until it’s baked through. Remove from oven, garnish if desired with chives or parsley.

Recipe Tips

  • Pat the chicken dryย โ€“ Donโ€™t skip this step or the seasoning won’t stick easily.
  • Thaw chicken correctlyย โ€“ If using frozen chicken from the freezer, make sure you have allow them to defrost properly before baking.
  • Bake in a hot ovenย โ€“ I baked these at 400 degrees f. This will ensure they bake properly and get crispy and nice and golden.

Substitutions and Flavour Changes

  • Seasoning – If you want to change the seasoning for this chicken recipe, it’s really easy. You could choose to use Homemade Cajun Seasoning, Moroccan Spice Seasoning, Homemade Mild Taco Seasoning or any of your other favourite seasonings.
  • Chicken thighsย โ€“ I used bone in, skinless chicken thighs for this recipe. You can choose to leave the skin on if you prefer. You could also useย boneless chicken thighs. If you prefer to useย chicken breast, you can. Just keep in mind, chicken breast is drier than chicken thighs.

Frequently Asked Questions

Should you cover chicken thighs with foil when cooking?

This questions gets asked often and I strongly feel that you shouldn’t cover the chicken when you bake it in the oven. If you cover the chicken, it will produce more pan juices, but it will not brown or get crisp on the outside.

What internal temperature is chicken cooked?

You can check the internal temperature of chicken with a meat thermometer. Chicken is cooked at a temperature of 165 F/74 C.

How can you prevent chicken from drying out in the oven?

Make sure the chicken is completely coated in whatever seasonings you are using. Don’t overcook the chicken or it may dry out. As well, as soon as you take chicken out of the oven, you can over it in foil to keep the juices from evaporating.
