Grilled Potatoes In Tin Foil

These Grilled Potatoes in Tin Foil are the perfect barbecue summer side dish. Small diced potatoes, lightly seasoned and cooked in butter over a hot barbecue. They can be prepped in advance and cooked just before serving.

Just the other week, I posted a recipe for homemade Country Fries. At first glance, these might look pretty similar. BUT, they are completely different and equally as tasty. These are great for summer and you can even make them camping!

What Are These Potatoes Like

  • Difficultyย โ€“ The recipe is pretty basic and easy. Just make sure to follow all the steps and donโ€™t miss anything out!
  • Tasteย โ€“ These potatoes have a delicious garlic butter flavour. The exterior of the potatoes are super crisp, while the inside of the potatoes are super fluffy and light.
  • Servingย โ€“ This recipe will serve between four and six people as a side dish. Remember, in the recipe card at the bottom of the post you can easily adjust servings to suit.

Ingredients

  • Potatoes – I used large Russet style potatoes. These work really well for grilling, roasting and baking. They will be soft inside and nice and crispy on the outside.
  • Butter – Butter not only gives a great flavour but it also enhances the golden exterior of the potatoes.
  • Seasonings and Herbs – I used salt, pepper, garlic powder and dried oregano for flavours for the potato dish.

Instructions

  1. Clean and cut potatoes – Scrub the potatoes and keep the skin on. Cut the potatoes into about 1 inch or slightly larger pieces. Place the cut potatoes in a colander and rinse really well. Shake off excess water and set aside the potatoes.
  2. Combine seasonings – In a small bowl, combine the dried oregano, garlic powder, salt and black pepper. Stir to combine and set aside.
  3. Lay out foil – Lay out a large sheet of good quality tin foil. Make sure it’s long enough so that you can wrap up the potatoes.
  4. Assemble potatoes on foil – Place the potatoes in the centre of the tin foil. Spread them out a little so they are not all piled on top of each other.
  5. Season potatoes – Sprinkle over the seasoning and coat the potatoes evenly. Dot the butter around the potatoes. Close up the tin foil and make sure it is securely closed.
  6. Cook – Place the foil package on a preheated hot barbecue. Cook total time for about 30 minutes or until golden and soft. Check the potatoes at about 20 minute to make sure they are not sticking or burning. If they are sticking, gently loosen them from the foil.
  7. Serve – Remove from barbecue and serve hot.

Recipe Tips

  • Prep ahead – You can prepare these potatoes, wrap them in foil and keep them in the fridge up to about 8 hours before you cook them.
  • Cut the potatoes into the same sizeย โ€“ Itโ€™s important to cut the potatoes as close to the same size as you can. This will ensure even grilling.
  • Use good quality foil – Make sure to use strong foil. If not, it will likely tear while grilling or when you are moving around the potatoes.

Substitutions

  • Potatoesย โ€“ As explained previously, I used Russet potatoes for this recipe. Try to stick to a large potato like Yukon Gold.
  • Butter – You could use olive oil for a little bit of a different flavour.
  • Garnishย โ€“ You do not need to garnish these potatoes, itโ€™s completely optional. I used fresh chopped parsley. However, fresh chives would be nice as well.
  • Cooking options – You can also cook these in foil in the oven. Follow the same method and place them in a preheated 350 degrees F/180 degrees C oven for 30 – 40 minutes.

Serving

Frequently Asked Questions

Can you reheat grilled potatoes?

Grilled potatoes are best served as soon as they are cooked. However, you can reheat them on a large baking tray at 350 degrees f/180 degrees c for about 10 minutes.

Why are my grilled potatoes not crispy?

There are many reasons your potatoes may not be crispy. If you used a potato with a higher starch content, like new potatoes they may not crisp up
