What is This Chicken Dish Like
- Difficulty – This is super easy. You make a simple marinade, pour it over the chicken, allow marinade time and cook. A great beginner dish!
- Taste – The chicken is tender and juicy and the chicken is has a hint of spice and isn’t overly sweet. A wonderful combination.
- Serving – I feel this recipe will easily serve 4 people and you could even stretch it to 6 at a pinch. Keep in mind at the end of the post in the recipe card you can adjust the serving size to you liking.

Ingredients
- Chicken – I used boneless and skinless chicken breast for this recipe.
- Olive oil – Olive oil is used to cook down the garlic.
- Garlic – Fresh minced garlic adds a great flavour to the marinade.
- Honey – Honey adds a sweetness to the chicken. You can use any honey that you like.
- Lemon juice – This helps marinade the chicken and keep it tender.
- Parmesan cheese – This gives the chicken a great flavour and helps create a crust.
- Chilli flakes – This adds a little heat to the chicken.
- Fresh herbs – I added my favourite, fresh minced parsley.
- Seasonings – I kept it simple and used salt and black pepper.

Instructions
- Flatten chicken – Place the chicken breast between two sheets of parchment paper. Using a kitchen mallet, pound the chicken to about 1 inch thickness and set aside.
- Make chicken marinade – In a small saucepan set over medium heat, add the olive oil and garlic. Bring to a sizzle for about one to two minutes. Reduce heat to low and add the honey, lemon juice, parmesan cheese, chilli flakes, parsley, salt and pepper. Stir really well to combine and bring to a simmer. Remove from heat.
- Marinade chicken – Place the chicken in a deep sided dish and pour over the marinade. Cover and refrigerate for one hour.
- Cook chicken – Preheat oven to 350ยบF/180ยบC and have ready a baking tray. Remove the chicken from the fridge and place on your baking tray. Pour over the marinade from the dish. Bake between 25 – 30 minutes until the chicken is fully cooked and golden.
- Serve – Remove from oven and allow to rest for about 5 minutes. Slice and serve. Pour over any pan juices.




Recipe Tips
- Don’t skip marinade time – It’s important to marinade the chicken for an hour (or longer if you have the time), to get the full flavour.
- Use a baking tray – If you use a deep sided small dish, the chicken won’t brown and you’ll have a lot of liquid in the pan after cooking. Using a baking sheet, will allow the chicken to brown, caramelise and leave a good amount of pan juices.

Substitutions
- Chicken breast – I used thick chicken breast that I flattened to about 1 inch thickness. You can use chicken cutlets, chicken thigh cutlets or even chicken tenders. Just keep in mind that cooking time will very depending on the type of chicken you are using.

Frequently Asked Questions
I don’t recommend covering chicken breast while cooking. If you cover the chicken, it won’t get a chance to brown and caramelise.
Chicken will be fully cooked when a meat thermometer inserted into the thickest part reaches 165ยบF/74ยบC. If you are new to cooking chicken, I do recommend using a meat thermometer to be on the safe side.
