And what better way to see off summer than with these quick and easy Summer Grilled Mixed Vegetables. This is a side dish anyone can cook. If you’re a novice cook, you can make these too. they are so easy and delicious.

Here’s What We Need to Make The Summer Grilled Mixed Vegetables

  • Red peppers
  • Zucchini
  • Asparagus
  • Olive oil
  • Rosemary
  • Coarse sea salt

And that’s it friends. You just literally slice up the vegetables and put them on the barbecue and cook to grilled perfection. So easy. So good!

Ingredients

  • 2 Red peppers cut into thick slices
  • 1 large zucchini cut into 2 cm pieces
  • 6 oz asparagus ends trimmed
  • 3-4 Tablespoons olive oil
  • 1 Teaspoon rosemary
  • Sea salt

Instructions

  • n a small bowl, combine the olive oil, rosemary and salt. Stir to combine.
  • Lay the vegetables out on a large baking tray and brush them with the olive oil.
  • Have ready a hot barbecue and place all of the vegetables over direct heat. Cook until charred and slightly soft. Probably about 8 minutes per side. Remove from heat and serve with your favourite barbecue dishes.
