Instructions
- Fry the uncooked rice in olive oil – In a medium saucepan set over medium heat, add the olive oil and bring to a sizzle. Add the uncooked rice and stir to completely coat the rice and give it a bit of a fry for about one minute.
- Add water and cook rice – Reduce heat to low and add all of the water. Cover and leave to cook for about 15 minutes or until all of the water has absorbed and rice is fully cooked.
- Fluff cooked rice – Remove the lid and fluff the rice with a fork. Start from the top and fluff from the top down to the bottom of the saucepan until all the rice is separated and fluffy.
- Add all seasonings and and lime juice – Transfer to a serving bowl and add the butter, lime juice, lime zest, cilantro and salt. Stir well to combine and serve.

Recipe Tips
- Measure ingredients correctly – Make sure to measure the rice and water correctly. If you use too much water, the rice will become mushy.
- Dry fry the uncooked rice – Don’t skip the step of quickly frying the uncooked rice in olive oil. This will ensure the rice cooks fluffy and separates easily.
- Fluff the cooked rice – When the rice is cooked, start fluffing it up with a fork from the top down. This will ensure you don’t have any rice clumps and it all separates perfectly.

Substitutions
- Basmati rice – Although I recommend using basmati rice, you can you other types of long grain rice. Just keep in mind it may not be as light and fluffy once cooked.
- Cilantro – Not a fan of cilantro? You can use parsley!
- Lime juice – For a slightly different flavour, you can opt to use lemon juice and lemon zest.

Serving
- Chicken & Turkey – I’ve served this with the Green Olive Chicken so many times and it goes great. As well, the Roasted Spatchcock Chicken would be great.
- Fish & Seafood – Why not serve it alongside the Lemon Crusted Baked Cod or the Pan Fried Hake.
- Beef & Pork – Serve it with the Moroccan Spiced Pork Kebabs or the Barbecue Pork Tenderloin.
