We’re going back to basics and using Homemade Pizza Dough for this pizza and it’s amazing! If you’re a fan of thin crust pizza, this pizza is for you. Much like my Mediterranean Thin Crust Pizza, this pizza has a crisp base and all the wonderful toppings that you expect to get from a great pizza!

Caramelized Onion Mushroom and Caper Pizza

What’s This Pizza Like

  • Difficulty – Making pizza from scratch is about a medium difficulty. Making the dough is a little hands on time and then it takes an hour to rise. Following all of the steps is crucial to getting a crisp base pizza.
  • Taste – This is a crisp pizza crust and an amazing flavour pizza. The caramelized onions are a little sweet and they go so well with the sauteed mushrooms and the tangy capers.
  • Serving – This recipe makes two large pizzas. They are thin crust and generally I would say one pizza per adult serving (if you’re really hungry!)

ingredients

  • For the pizza dough – This recipe uses bread flour, instant yeast, salt, sugar, olive oil and warm water.
  • Onion – I used a large white onion.
  • Mushrooms – Fresh button mushrooms.
  • Cheese – I used grated mozzarella cheese.
  • Capers – Capers, though quite small, pack a big punch: Theyโ€™re quite tangy and add a lemony, olivey burst of flavor to dishes.
  • Oregano – I used dried oregano for seasoning the pizza.
  • Olive oil – I used olive oil in cooking the mushrooms and onions as well as brushing the pizza crust before cooking.
  • Marinara sauce – I used homemade Marinara Sauce for this pizza.

Instructions

  • *Make pizza dough – See full instructions for making pizza dough in the recipe card.
  • Caramelized onions – Heat one tablespoon of olive oil in a skillet over medium to high heat. Add the onions and give a good stir. Reduce heat to medium and allow to cook for about 10 minutes until golden and soft.
  • Sautee mushrooms – Heat another tablespoon of olive oil in a separate skillet and add the mushroom. Lightly sautee for about 5 – 8 minutes. Remove from heat.
  • Roll out dough – Place the dough ball on a lightly floured surface and press it down with your hand. Start stretching the dough with your hands. Stretch the dough out to approximately a 12 inch circle.
  • Place on top of a pizza board – Place the pizza dough on top of a sheet of parchment paper. Then place it on top of a pizza board. (This will make it easy to slide it into the oven).
  • Top the pizza – Top the pizza with the sauce, oregano, mozzarella cheese, caramelized onions, mushrooms and capers. Brush the edges of the pizza with remaining olive oil.
  • Cook pizza – Slide the pizza into the oven on the preheated surface. Bake between 6 – 8 minutes
  • Serve– Remove from oven and allow to sit a few minutes before cutting and serving.

Recipe Tips

  • Pizza dough โ€“ For this recipe I used my own homemade Pizza Dough. MAKE AHEAD: Pizza dough can be made in advance and kept in the fridge for about 10 days! Bring it to room temperature before using.
  • Pizza assembly โ€“ I always like to assemble my pizza on a sheet of parchment paper placed on top of a pizza board. This makes it very easy to slide the pizza into the oven. The pizza will go in the oven on top of the parchment paper.
  • Cooking the pizza โ€“ Itโ€™s very important to have a preheated surface in the oven to place your pizza on top of. I canโ€™t stress this enough. Itโ€™s best to use a heavy surface like a pizza stone, cast iron or baking steel. If you donโ€™t have any of those things, use a baking sheet of any kind.
  • Cooking time โ€“ this pizza cooked in exactly 6 minutes in a preheated 475 degrees f oven. It was cooked with the rack at the lowest setting and on a preheated cast iron surface. Cooking time will vary depending on what surface you are cooking your pizza on and how hot your oven is.

Substitutions

  • Capers โ€“ I used capers for this pizza but you could use black olives (Kalamata) or any kind of Green olives
  • Cheese โ€“ I used mozzarella cheese to top the pizza. But you can use any flavour cheese you like. Goat cheese would be great on this pizza and you add a little parmesan if you like the flavour.
  • Oregano โ€“ This recipe uses dried oregano but you can easily use fresh herbs like basil or even mint for a fresh flavour.
  • Marinara Sauce – I love red sauces on pizza, but you could completely use a white sauce like seen in my Spinach and Alfredo Whole Wheat PIzza.
  • Pizza dough – Although I used my homemade pizza dough recipe, you can use premade or store bought dough for this recipe.

Serving

We all know that pizza is just great on itโ€™s own. But there is nothing wrong with serving it with a great Grilled Cajun Chicken Salad on the side or even a light and simple Classic Caprese Salad.

Whatโ€™s the difference between thick crust and thin crust pizza?

Thick crust pizza has a thicker base, almost bread like. Whereas, thin crust pizza is much thinner and crispier.

Is thin crust pizza dough different to regular dough?

Although there are different recipes for different types of pizza, you can use any pizza dough to make thin crust pizza. You just stretch the pizza thinner before topping and cooking it.

Is thin crust pizza healthier?

Generally yes, because the slices are thinner and thin crust canโ€™t hold as many toppings. But it would depend on how much cheese and toppings you have on your pizza.

Ingredients

For the Dough:

  • 2 cups bread flour
  • 1 1/2 teaspoon instant yeast
  • 1/2 teaspoon salt
  • 1/2 tsp sugar
  • 1 tablespoons olive oil
  • 3/4 cup warm water

For the topping:

  • 1 large onion halved and thinly sliced
  • 1 cup mushrooms sliced
  • 1 cup mozzarella cheese
  • 4 Tablespoons capers
  • 2 Teaspoons oregano
  • 4 Tablespoons olive oil divided
  • 3/4 cup marinara sauce

Instructions

Make the pizza dough

  • In a large mixing bowl combine the flour, salt, instant yeast and sugar. Mix well to combine. Drizzle over the olive oil and just give a quick stir.
  • Make a well in the middle of the flour and pour in about 1 1/2 cups of the water. Using a fork, start pulling the flour into the water until you have incorporated all the flour. If it seems too dry, add remaining water. The dough should be really sticky at this point.
  • Take the dough out of the bowl and place on a clean and lightly floured surface. Lightly flour your hands and start kneading the dough. Flip and knead the dough until it's soft, elastic and springs back when touched. This will take around 5 minutes.
  • Place the ball of dough in a large flour-dusted bowl. Cover the bowl with a damp cloth and place in a warm room for about an hour until doubled in size.
  • Now remove the dough to a flour-dusted surface and punch it down and divide into two equal portions.

Cook the onions and mushrooms

  • Heat one tablespoon of olive oil in a skillet over medium to high heat. Add the onions and give a good stir. Reduce heat to medium and allow to cook for about 10 minutes until golden and soft.
  • Heat another tablespoon of olive oil in a separate skillet and add the mushrooms. Lightly sautee for about 5 – 8 minutes. Remove from heat.

Assemble the pizza

  • Place the dough ball on a lightly floured surface and press it down with your hand. Start stretching the dough with your hands. Stretch the dough out to approximately a 12 inch circle.
  • Place the pizza dough on top of a sheet of parchment paper. Then place it on top of a pizza board. (This will make it easy to slide it into the oven).
