This Chicken Fajitas Dinner is a great way to get your people to the dinner table. Seasoned chicken over sauteed onions and peppers and all wrapped up in a Home Made Flour Tortilla with all the toppings!
Fajitas are such a fun food to eat. In our house, we love them. You can mix and match them with whatever fillings you prefer, but these here are our favourites. It is just classic and simple. It is also a fun way to entertain as everyone can make their own.
These go great just as they are or with the Mexican Style Rice, Wild Rice & Black Bean Salad or the Avocado and Corn Salad. All really great options to turn it into an even bigger dinner. Whatever you choose to serve them with, they are a fantastic dinner idea.

What’s great about this dinner, is you can do everything in advance. Yes, everything. Then the only thing you have to do ahead of serving is cook the chicken and you’re done.

Chicken Fajitas Dinner
Ingredients
- 4 chicken breast cut into strips
- 1 red pepper finely sliced
- 1 onion finely sliced
- 4 cloves garlic crushed
- juice of one lemon
- 1 tablespoon cumin
- 2 tablespoons olive oil
- 2 chilies finely chopped (optional)
For Serving:
- ยฝ head iceberg lettuce roughly torn
- 1 large tomato chopped
- 1 cup sour cream
- 2 cups cheddar cheese grated
- 1 cup Guacamole
- 10 Flour Tortillas
Instructions
- In a large bowl, combine the chicken with garlic, lemon juice, 1 tablespoon olive oil, cumin, chilies (if using), salt and pepper. Stir to coat the chicken, then cover and refrigerate for several hours.
- Meanwhile, in a large skillet add the other tablespoon of olive oil with the peppers and onions. Cook over high heat for a few minutes until they are slightly browned. Then reduce heat to medium-low and continue to cook until they are quite soft. Remove from heat and set aside.
- In another skillet, turn heat to high and add the chicken. Stir frequently and cook the chicken over high heat for about 10 minutes.
- Remove from heat along with the peppers and onions. I like to serve the chicken on top of the peppers and onions as shown above. Serve with the Avocado dip, tomatoes, lettuce, cheese, sour cream and Flour Tortillas. Enjoy!
