What Is This Pasta Dish Like

  • Difficulty โ€“ This is an easy dish to make that takes only 10 minutes to prep and cooks in about 10 โ€“ 15 minutes.
  • Taste โ€“ This is a decadent dish that has a mild ricotta flavour. Itโ€™s very creamy and rich tasting.
  • Serving โ€“ This makes 4 servings as a main course. You have to serve this dish fresh from the stove for best results. In the recipe card at the end of the post you can change the serving size to suit your dinner table!

Creamy Pasta with Ricotta

Ingredients

  • Pasta – I used fusilli pasta.
  • Olive oil – 2 tablespoons olive oil
  • Garlic – Please use fresh minced garlic for this recipe as it will give a fantastic flavour.
  • Ricotta cheese – You can find this in the chiller section of your grocery store. It’s a soft Italian cheese that will come in a small tub.
  • Seasonings – I added a little dried oregano, salt and pepper.
  • Herbs – Fresh chopped parsley worked great in this dish.
  • Pasta water – Pasta water is used to make the sauce. So, it’s very important not to discard all the pasta water after you drain the pasta.
  • Parmesan cheese โ€“ This is a must for the sauce, so donโ€™t skip out on it!

Instructions

  1. Cook pasta – In a large saucepan of simmering water, add the pasta and cook according to package. Drain and set aside. Reserve one cup/240 ml pasta water.
  2. Cook garlic – While the pasta is cooking, heat a large skillet over medium heat. Add the olive oil and garlic. Give a good stir for a minute or so until fragrant.
  3. Make sauce – Stir in the ricotta cheese until it’s creamy. Add the oregano, salt, pepper and fresh parsley. Stir in until combined. Gradually start pouring in the pasta water, whisking as you pour to ensure you achieve a smooth sauce.
  4. Add pasta and cheese – Add the cooked pasta and parmesan cheese. Stir well to combine completely.
  5. Serve – Serve hot and top with additional parmesan cheese if desired.

Recipe Tips

  • Multi task โ€“ As soon as you put your pasta on to cook, get going on the sauce. This means that the sauce and the pasta should both be done at about the same time.
  • Slowly add the liquid โ€“ Itโ€™s important to slowly add the pasta water and whisk as you pour. This will ensure that the sauce is smooth with no lumps.

Substitutions

  • Fusilli pasta – You could used penne, rigatoni, tagliatelle or even spaghetti.
  • Ricotta cheese – Although I love Ricotta cheese for this dish, Mascarpone would be a good alternative.
  • Herbs – I used parsley for a milder flavour, but you could easily add fresh basil in this pasta dish.
