Hey there friends, I hope you’ll having a great start to your week and enjoying some nice Dinners. I’ve been working on a few new spring themed recipes the past few days and I’m sharing the first one today. If you love fresh and light side dishes like the Parmesan Topped Zucchini, this one is for you. Broccolini has a great flavour, it’s easy to cook and wonderful to serve during the spring season with Chicken and Seafood dishes.

What’s This Side Dish Recipe Like
- Difficulty – This is a super easy side dish. You can make the garlic butter before hand if you like and just add before roasting.
- Taste – the flavours bring broccolini next level. A great garlic butter flavour with a hint of lemon and parmesan. Wonderful.
- Serving – This recipe will comfortably make four servings as a side dish. You could even stretch it to six servings if there are other side dishes being served.

Ingredients
- Broccolini – You should be able to find broccolini (tenderstem broccoli) at your local supermarket in the produce section.
- Garlic butter – I made a homemade garlic butter by combining butter, minced garlic, salt and minced parsley.
- Lemon – I used a fresh lemon and cut it into small slices to add to the broccolini before roasting.
- Parmesan cheese – Fresh grated parmesan cheese is added to this dish half way through roasting.

Instructions
- Preheat oven – Preheat oven to 425ºF/220ºC and line a large baking sheet with parchment paper. Set aside.
- Make garlic butter – In a small saucepan, add the butter, garlic, salt and fresh parsley. Set over low heat until it sizzles, about 3 minutes. Remove from heat.
- Roast broccolini – Arrange the broccolini on the baking tray, making sure they do not overlap. Drizzle over the garlic butter and arrange the lemon slices. Roast for about 10 minutes. Remove from oven and sprinkle over the parmesan cheese. Return to oven for another 5 – 6 minutes.
- Serve – Remove from oven and serve immediately.






Recipe Tips
- Watch roasting time – I like the broccolini with a bit of a bite. So adjust cooking time according to how soft you would like the broccolini. This was cooked for 15 minutes and it was tender with a little bit of a bite.
- Best served fresh – I recommend serving dish straight out of the oven. It’s still good leftover and reheated. But it’s best fresh.

Substitutions
- Broccolini – If you can’t find broccolini in your supermarket, you could use asparagus, green beans, purple spouting broccoli or regular broccoli.
- Garlic butter – I made a homemade garlic butter and added to this dish. Alternatively, you could skip the butter and add olive oil in it’s place.

Serving
- Chicken & Turkey – I’ve served this with the Green Olive Chicken so many times and it goes great. As well, the Roasted Spatchcock Chicken would be great.
- Fish & Seafood – Why not serve it alongside the Lemon Crusted Baked Cod or the Pan Fried Hake.
- Beef & Pork – Serve it with the Moroccan Spiced Pork Kebabs or the Barbecue Pork Tenderloin.

Frequently Asked Questions
Broccolini is also knows as Bimi, baby broccoli and tenderstem broccoli. It’s very similar to broccoli but it’s actually a hybrid vegetable made from combining broccoli and Chinese kale. It has long stems and a small floret. It’s a great vegetable for roasting or adding to stir frys.
It is similar to broccoli but a little sweeter and even a little nutty.
