Ingredients

  • Pasta โ€“ I opted for Penne pasta which worked really well in this dish.
  • Olive oil โ€“ I used extra virgin olive oil for cooking.
  • Garlic โ€“ Fresh minced garlic will give the best flavour.
  • Sun dried tomatoes โ€“ For best results use sun dried tomatoes packed in oil. They have a huge flavour punch!
  • Cream – I used a cooking cream to make the sauce. Although this isn’t an overly creamy sauce, the cooking cream makes a light sauce that is delicious.
  • Parmesan cheese โ€“ This recipe uses freshly grated parmesan cheese.
  • Seasonings โ€“ I used dried basil, salt and black pepper.
  • Fresh herbs โ€“ I added fresh chopped parsley for additional freshness and flavour when the dish was finished.

  • Type of sun dried tomatoesย โ€“ The best type of sun dried tomatoes to use in this recipe are the ones that are packed in oil. They give so much flavour.
