Chicken Cutlet Sandwiches with Roasted Italian Peppers

Make these Chicken Cutlet Sandwiches with Roasted Italian Peppers. These Sandwiches are made from lightly marinaded chicken cutlets in lemon and garlic. Then they are cooked to tender perfection and topped with caramelized onions, Roasted Italian Peppers, crisp lettuce and tomatoes. All wrapped up in crispy Baguette Bread! I’ve been making these sandwiches for the best part of two decades. They are always on the list as a go to sandwich which is a complete meal in itself. The entire family love them and we quite often serve them with Crispy Oven Fries, the Spiced Roasted Potatoes or the Crispy Oven Roasted Parmesan Baby Potatoes.

  • Flavour – These sandwiches are made with honest to goodness fresh and delicious ingredients. The sweet onions, with roasted peppers and tender seasoned chicken are just perfect.
  • Make ahead – You don’t need to eat these sandwiches fresh off the stove. You can prepare and cook everything hours before serving. These sandwiches are just as delicious at room temperature.
  • Great for parties and get togethers – you can easily make the recipe bigger and these make a great casual way for entertaining.

Ingredients

  • Chicken – I used thin chicken cutlets
  • Fresh – Italian green peppers, tomatoes, lettuce, lemon juice and garlic
  • Seasonings – olive oil, salt and pepper
  • Bread – I used baguette bread

Instructions

  1. Roast peppers – Preheat oven to 375 degrees. Place the pepper on a large baking tray. Drizzle over olive oil and sprinkle over sea salt. Pierce a few holes in the peppers. Roast for 35 – 40 minutes until charred and soft. Remove from oven.
  2. Caramelize Onions – In a medium sized skillet, add 1 tablespoon of oil the onions. Cook for about 5-8 minutes until browned. Turn heat to low and continue cooking until onion are completely soft and browned. Remove from heat and set aside. this will probably take about 10 more minutes.
  3. Marinade chicken – Give the chicken a quick marinade by adding 1 tablespoon of olive oil, lemon juice, garlic salt and pepper to a medium bowl. Add chicken a coat completely. Set aside.
  4. Cook chicken – In a large grill pan, add the last tablespoon of olive oil. Add the chicken fillets, discarding the extra marinade. Cook each side over high heat for about 3 – 4 minutes per side, or until chicken is tender and no longer pink.
  5. Assemble sandwiches – Put the sandwiches together by stacking, first chicken, onions, peppers, tomato and lettuce. Sprinkle over a little sea salt if you like.

Notes About The Chicken Sandwiches

  • The best chicken to use – I used thin chicken cutlets. But you could use chicken breast. Just cut them in half through the middle and pound them flat.
  • Don’t over marinade – For best results, don’t marinade the chicken too long. The citrus breaks down the chicken. I do it for only about 15 minutes.
  • Italian Green Peppers – You can substitute red peppers or other peppers that you may prefer. But we love the Oven Roasted Italian Green Peppers for this recipe.
  • Caramelized Onions – This gives so much depth of flavour to the sandwich so don’t skip it! Read more about How to Caramelize Onions.
  • Bread – Because of all the ingredients in this sandwich, I recommend a sturdy bread. I used baguette bread and lightly toasted it for best results. Any kind of crispy bread would work well for these sandwiches.
  • Fresh ingredients – these sandwiches are topped with basic salad tomatoes and iceberg lettuce. You can choose other greens like spinach, arugula or mixed salad greens.

What’s Great To Serve with These Chicken Sandwiches

Fresh salads like the Greek Salad with Marinated Feta or the Roasted Red Pepper and Feta Salad are both great options. It would also go great alongside the Easy Red Pesto Pasta Salad or the Roasted Bell Pepper Pasta Salad.

  • 1 lb chicken cutlets
