How cute is this Sausage Roll Christmas Tree! By just using sausages, puff pastry, an egg wash and a decorative herb, this comes together quickly. It would make a festive addition to any holiday table this year.
Today, I’m bringing you another super easy holiday appetizer. Much like my original Easy Sausage Rolls recipe, this is super easy to make. After posting the Christmas Tree Charcuterie Board recently, I thought this would be another fun idea for the holidays.
What’s This Appetizer Like
- Difficulty level – Easy! Anybody that knows how to use an open and cut frozen pastry can make this. It’s fun to make and takes only about 15 minutes.
- Taste – This is a super tasty appetizer. You can use whatever kind of sausages you like to suit your taste buds.
- Holiday themed – This is a great holiday themed appetizer that would go great as a lunch or appetizer for a party.
Ingredients
- Sausages – I used thin pork sausages for this appetizer.
- Pastry – Store bought puff pastry works great for this recipe.
- Egg – A whisked egg is used to brush the top of the tree before baking.
- Fresh parsley – I added finely chopped fresh parsley after it was baked to add a little greenery.

Instructions
- Preheat oven – Preheat oven to 375 degrees F. Line a large baking tray with parchment paper. Set aside.
- Cut sausages – Cut all of the sausages in half cross ways.
- Prepare sausage rolls – Cut the pastry in strips, slightly smaller than the width of the sausage. Next, place a sausage on top of the pastry and roll it up. Cut the pastry as soon as you have rolled up for your first sausage. Continue to repeat these steps until you have rolled up all of your sausages. Cut all of the prepared sausage rolls in half so they are bite size.
- Cut pastry stars – Using a small star cookie cutter, cut out a few pastry stars.
- Assemble Christmas tree – Start making your Christmas tree by placing a star at the top. Then place one sausage roll below the star. And then a row of two, a row of three and continue until you have used all but a couple of your sausage rolls. Use the last two to make a tree trunk. Place extra stars around the tray.
- Brush sausage rolls – Using a pastry brush, brush all the sausages with the egg wash.
- Bake – Bake between 15 – 18 minutes or until golden and puffed up.
- Serve – Garnish with finely chopped parsley and serve with your favourite dipping sauce.
Recipe Tips
- Use thin sausages – Thin sausages work best this recipe. For best results, I don’t recommend using thick sausages.
- Allow pastry to thaw – Make sure the pastry has thawed completely before unrolling. Slightly frozen pastry will crack when you try to roll it out.
- Use cold puff pastry – Puff pastry is much easier to work with when it’s cold out of the fridge. If it is at room temperature it will stretch easily and possibly tear or lose it’s shape.
- Bake – Watch baking time as all ovens bake at different times. These baked for me in exactly 15 minutes. They will be done when they are golden and puffed up.
- Prep ahead – This is a great make ahead appetizer. You can put this tree together, cover it and refrigerate up to 24 hours before baking.
Substitutions
- Puff pastry – If you don’t have any puff pastry, you could use Pizza Dough, pie crust, phyllo pastry, biscuit dough or even crescent roll dough for this appetizer.
- Sausages – I used thin pork sausages for this recipe. Any kind of thin sausages would work. You could even use a vegetarian substitute sausage or wieners.
- Egg wash – This is used to give the sausage rolls a golden touch. You could use melted butter or even garlic melted butter.
- Seasonings – I didn’t top this with any seasonings, however, you could add a flavour boost before baking. Sprinkle over Everything Bagel seasoning, poppy seeds or sesame seeds.
Serving and Storage
- As part of a buffet – This would be a great addition alongside the Antipasto Christmas Wreath at a holiday party.
- Kids party – Kids would love to have this as part of a lunch or at a party this season.
- Pot luck – This would make a great holiday appetizer to take to a pot luck party. You can make it and wrap in foil just before heading out the door.
- Serve hot or room temperature – This appetizer can easily be served fresh from the oven or at room temperature. So, don’t worry if you have to bake it in advance, it’s great at room temperature.
- Serve with dipping sauces – These little sausage bites are great as they are, but you can serve with your favourite dipping sauces such as Dijon Mustard & Honey, Barbecue, hot sauce, sweet and sour sauce or anything else you might like.

- 14 sausages the thin kind are preferable
