What Is This Sheet Pan Dinner Like

  • Difficulty – Make this for a quick and easy dinner. It can all be prepped ahead of time and popped in the fridge before cooking time.
  • Taste – If you love the Sheet Pan Dinners, you’ll love this dinner idea! A complete meal of tender chicken pieces with soft roasted sweet potatoes.
  • Serving – This recipe makes four generous servings.

Ingredients

  • Chicken thighs – I used small skinless chicken thighs for this recipe.
  • Sweet potatoes – 2 large sweet potatoes peeled and cut into about 2 inch pieces
  • Leek – I added one diced leek to this dish and it really added to the fall flavour.
  • Hot honey – Hot honey is pretty much available in most supermarkets these days. It’s regular liquid honey that packs a bit of heat.
  • Olive oil – Extra virgin olive oil is used in the marinade.
  • Lemon juice – I used bottle lemon juice for this recipe.
  • Garlic – Fresh minced garlic.
  • Seasonings – I used a mix of oregano, thyme, salt and black pepper.
  • Parsley – The addition of fresh chopped parsley adds extra flavour and freshness to the dish.

NOTE, The full recipe and ingredient list can be found at the end of the post in the recipe card.

Ingredients to Make Sheet Pan Chicken and Sweet Potatoes

Instructions

  1. Preheat oven – Preheat oven to 425ºF/218ºC and have ready a large baking tray.
  2. Arrange chicken and vegetables – Arrange the chicken, sweet potatoes and leeks evenly on the baking tray.
  3. Make marinade – In a small bowl combine the hot honey, olive oil, lemon juice, garlic, oregano, thyme, salt and black pepper. Whisk to completely combine.
  4. Coat chicken and vegetables – Evenly pour the marinade over the chicken and vegetables. Using a pastry brush, spread out the marinade evenly to make sure all the chicken and vegetables have been coated.
  5. Bake sheet pan dinner – Place in the preheated oven for about 25 minutes and then spoon over juices and rotate the pan. Return to the oven for a further 20 – 25 minutes or until the chicken is cooked all the way through. Remove from oven and garnish with fresh chopped parsley.
  6. Serve – Serve hot with the pan juices or even with a yogurt dip if you like.

Recipe Tips

  • Pan size and type – I used a large low rimmed baking sheet for this dinner. As you can see the food nestled in nicely. By not having space around the chicken or vegetables, the food will produce more pan juices.
  • Evenly cut vegetables – When cutting the vegetables, try to make them as close to the same size as possible. Uneven sized vegetables will cook differently and you may end up with overcooked or under cooked vegetables.
  • Pour over pan juices – At the half way cooking mark, about 1/2 hour, remove the sheet pan from the oven and spoon over any pan juices. Return to oven and allow to finish cooking.

Substitutions

  • Chicken thighs – I used boneless, skinless chicken thigh cutlets for this recipe. You can choose to leave the skin on if you prefer. You could also use bone in chicken thighs. If you prefer to use chicken breast, you can. Just keep in mind, chicken breast is drier than chicken thighs.
  • Sweet potatoes – Alternatively, use can use Butternut squash, Buttercup squash, honey nut squash and acorn squashes are all suitable substitutes for this recipe.
  • Leeks – These add a nice subtle earthy flavour. However, you could opt for red or brown onions.
